    90 Second Microwave Christmas Fudge

    This 90 second microwave Christmas fudge pairs perfectly with a World War II Christmas tale. And long lines at the toy store. 

    I can't believe it's December 1st! 25 days until christmas!

    I love Christmas, but to be honest this year I'm just ordering it online. I think I'll go to two stores. I have no reason to drag myself to the stores when Amazon can deliver in two days! I mean, I can order what I want and need and not spend two days sitting in line while cranky over hungry kids call me on the phone wanting to know when I'm coming home and can I possibly bring home dinner with me?

    I did opt to go to two stores, and the last one made me decide I'm done sitting in a line with three screaming toddlers and babies in front of me to save $2 on a toy that my child absolutely HAD TO HAVE and will open on Christmas day and loose interest in within two minutes.

    Or a toy that I will have forgotten to get batteries for. Did you know that not even a GAS STATION is open on Christmas Day? Yup learned THAT the hard way one year when driving all around town to find batteries.

    So as I'm sitting in line waiting to save $2 while trying to drown out someone else's screaming kid (it's TOTALLY easy to do when it's your own--but you're not familiar with someone else's kid's cry so it's much harder). And then you're kids are calling and texting you about dinner and finally you decide you are just going to shut out everyone for a few minutes lest you loose it and WALK OUT OF THE STORE and LOSE saving $2!

    So I decided to immerse myself in a World War II book while in line. Anyone who knows me well knows I love studying World War II. This is a rather unique story about a POW Air Force Pilot Wendell Terry who ends up having to evacuate his plane and ends up in enemy territory. He ends up in a POW camp and towards the end of the war is given a small package from the Red Cross that contains the ingredients to make fudge. As a Christmas present, he gives the fudge to his men in his barracks. It is an amazing and touching Christmas story and by the time I got to the front of the line I didn't even notice the 25 missed phone calls or the crying toddlers (in fairness they had already purchased their stuff but I'm going with it).

    That night to finish up the book I made my own fudge. Since I don't have the luxury of having that kind of time to make good old homemade fudge with a candy thermometer, nor would I ever DARE try to attempt it by sight like Wendell Terry did, but I did try a 90 second microwave version that turned out fantastic!

    90 Second Microwave Fudge

    Ingredients

    • 1 pound powdered sugar
    • ½ cup cocoa powder
    • ½ cup butter, cut into chunks
    • ¼ cup milk (dairy free milk can be substituted)
    • 1 tablespoon vanilla
    • ½ cup pecans or walnuts

    Instructions

    1. Line an 8x8 inch pan with wax paper or plastic wrap. Spray lightly with cooking spray.
    2. Put all ingredients except for the vanilla or nuts (if using) into a microwaveable bowl.
    3. Microwave for 90 seconds. Remove from oven, stirring until smooth.
    4. Whisk in the vanilla and nuts (if using).
    5. Pour the mixture into the pan, smooth evenly and then refrigerate until set.
