let's start off our fudge by using just a few simple substitutions because cooking fudge isn't just for dairy lovers! and we're excited--no one notices the difference between dairy and dairy free when I make this recipe!
- butter: you can us dairy free butter--we used earth balance.
- chocolate chips: you can substitute chocolate chips with dairy free chocolate chips like those from enjoy life!
- mini marshmallows: we usually use dandies vegan marshmallows.
- sweetened condensed milk: we like nature's charm sweetened condensed coconut milk

storing fudge is simple and easy! i highly recommend using one of these methods:
- refrigerator: fudge can be stored in the refrigerator for up to two weeks in an airtight container. if storing fudge in layers you will want to use parchment paper or waxed paper to separate the fudge. note that refrigerating fudge may result in the fudge drying out.
- freezer: storing the fudge in an airtight container between layers or waxed paper or parchment paper. fudge can be stored in the freezer for several months. to thaw, place the fudge in the refrigerator or allow to thaw at room temperature for several minutes.
- room temperature: much like refrigerating and freezing, fudge can be stored at room temperature in an airtight container between layers of waxed paper or parchment paper for several weeks.

Dairy Free Peppermint Fudge
Ingredients
- 2 cups dairy free semi sweet chocolate chips
- 1 can (14oz) dairy free sweetened condensed milk
- ¼ cup dairy free butter
- ¼ tsp peppermint extract
- 2 cups mini marshmallows
- 1 large candy cane, crushed
Instructions
- Place the chocolate chips, sweetened condensed mllk and butter in a microwave safe bowl or in a saucepan set to medium heat.
- If using microwave, microwave for approximately 90 seconds. Stir to combine, then continue to heat at 15 second intervals, stopping to stir until smooth. If using the saucepan, heat until mixture melts and is smooth.
- Once mixture is melted, remove saucepan from heat and stir in marshmallows and extract. Stir just until combined and marshmallows begin to melt (you will not want them to fully melt).
- Pour the mixture into a greased 8x10 inch pan, smoothing with your spatula to evenly spread fudge.
- Sprinkle candy cane bits on top then chill in the refrigerator for a minimum of one hour to overnight. Remove from fridge, then cut into pieces.
