Gluten Free Golden Graham Cereal Bars Recipe (S’Mores Bars)

Many years ago a friend brought some Golden Graham cereal bars to a work potluck. They were amazing! Now anytime I make them for a potluck or event they are pretty much gone.

The kids think they have some super magical powers in them that make you eat an entire pan in one sitting.

For the 4th of July we had some friends and family over and I didn’t want to miss out on these this year so I opted to make some gluten free Golden Graham cereal bars.

Speaking of 4th of July did you know you could stick six feet of fireworks in a Prius?

We also spent a lot of time poolside. So did this booger.

She loves our evening swims. She has learned it’s a great time of night to relax and chew her bone by the pool while we get into the hot tub.

The kids were wanting some s’mores bars but I was a little nervous since the boys were also trying to blow up the neighborhood. So I opted for this no bake version. I wanted some too! So I was able to make myself some for me too!

Oh, and this recipe is vegan, gluten and dairy free! But Im serious that you would never know. I don’t like my recipes not tasting like the traditional. And this one is almost spot on.

WHAT IF I DON’T HAVE THE TIME TO MAKE THE CEREAL FROM SCRATCH? IS THERE GLUTEN FREE GRAHAM CEREAL?

At the time of the writing of this article I could not find any golden grahams cereal. Or any gluten free graham cereal. There are several brands that are close though.

I REALLY WANT GRAHAM CEREAL! WHAT ELSE CAN I USE IN PLACE OF IT IF I DON’T LIKE THE CEREAL SUBSTITUTES?

In a pinch, I would say that yes you could try to use graham crackers. But there are a few specific ones that I would recommend using/not using. Pamela’s Graham Crackers I would NOT recommend using. They are very thick and have an oily heavy texture to them. Schar and Kinnikinick are some of my favorites and might work well as a substitute in this recipe.

My all time favorite graham crackers though are these ones from Snackin’ Free. They are amaaaaaazing!

No joke, everytime I go to California i spend a lot of money here stocking up. Also try the “no wheat” wheat thins. Soooo good and are almost spot on to the originals.

ARE THESE AS SWEET AS THE ORIGINAL GOLDEN GRAHAMS CEREAL S’MORES BARS?

No, these are not as sweet but that’s also a good thing I think. Part of the addiction of the original bars is the overwhelming good but also sugary sweet taste of the bars. These bars satisfy just fine. But I will say if you want as close to the original bar as possible, the Snackin’ Free honey grahams or the Schar or Kinikinnick grahams are going to give you the closest taste to the original cereal recipe.

Gluten Free Golden Graham Cereal Bars (S’Mores Bars)

For the cereal:

  • 2 cups whole wheat flour (or gluten free flour mix)
  • 2 tbsp oil or coconut oil, melted
  • 2 tbsp brown or coconut sugar
  • 1 tbsp molasses
  • 1 tbsp honey
  • 1/2 cup milk (can substitute dairy free)
  • 1 cup water
  • 1/2 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder

For the cereal bars:

  • 7 cups “Golden Grahams” cereal
  • 16 oz mini marshmallows, divided (we used Dandies)
  • 1/2 cup butter (can substitute dairy free butter)
  • 8 oz semi sweet chocolate chips (can use allergy friendly)

TO MAKE THE CEREAL:

Preheat the oven to 350 degrees. Line two cookie sheets with parchment paper. In a mixing bowl, stir together the ingredients until combined. The dough will be soft. Spread the dough onto the cookie sheet, spreading to 1/8-1/4 inch thickness. Bake at 350 degrees for 15 minutes. Remove the cookie sheet from the oven and with a pizza cutter slice dough into small squares. Stir the cereal then place back into the oven and cook an additional 10-15 minutes. Remove from oven and allow to cool before making bars.

TO MAKE THE BARS:

Set aside 3 oz of chocolate chips and 3 cups of marshmallows.

In a pan, melt the butter and six cups of mini marshmallows over low heat, stirring constantly until melted. Remove from heat and stir in five ounces of chocolate, stirring until melted. Stir in cereal, mixing until combined. Add in 3 cups of marshmallows (these marshmallows will not melt).

Pour then press mixture evenly into a 9×13 inch pan. Sprinkle then press remaining chocolate chips evenly over the mixture. Allow bars to cool for several hours then cut into squares.

To store: Store bars in an airtight container for up to one week. Makes 12-16 bars.
