Hi, I'm Traci! Nice to meet you! Pull up a chair and let’s chat over a gluten free croissant and coffee. (Do gluten free croissants exist?? Does coffee tear your stomach up??) I know if we sat down and chatted for a minute I would probably hear how busy you are. How hard it is to find things you can enjoy or maybe how tough it is to eat or drink certain foods. How time consuming it is to meal plan when you have a bajillion intolerances to foods! I want to help you focus your time on the things that are important to you. Ten years ago I got diagnosed with colitis and at the time had a baby, two other kids, and a husband that traveled a lot. I had NO time to sit down and plan out meals and figure out what I could eat! Burnt Apple became my own personal coffee shop--a place to connect with you and share how I was adapting family recipes. It's become a place to share meals for your busy lifestyle--meals that are five ingredients or less and ready in under thirty minutes! All of our meals are gluten free and many are dairy free, FODMAP friendly.

What is Colitis and FODMAP?
I was diagnosed ten years ago with colitis. A big part of helping to control my colitis is by eating foods on the FODMAP diet. Colitis and the FODMAP diet have drastically improved how I feel and control flare ups (although they don't eliminate them!)
But colitis started even further back then we knew...
After my Dad's diagnosis, and as I grew up and then started my own family I was shocked by how many people in my own family and my extended family had food allergies! in my late teens I started to experience stomach issues and problems, and after my third child I was diagnosed with colitis and now no longer eat gluten, certain types of dairy and other foods. I have family members and my kids friends who have all sorts of allergies like yeast, egg, dairy, gluten, coconut and more! When family and friends would come over I would try to have a treat available that they could enjoy. I shared the recipes online so my friends and family could see the recipe modifications I made for their kids treats and the website grew from there...
