What are pancake bites?
Pancake bites are the mini versions of regular pancakes. I bought a box for the kids at Sprouts and the kids fell in love with the concept. The only problem is they ate them at an alarmingly fast rate and wanted more. So the next trip I bought four boxes and it didn't even last a week.
I decided to make them some homemade ones and they absolutely loved them! And they were surprisingly easy to make. So let's get started on yours!

Ingredients
You need just a few simple ingredients to make your pancakes! Grab:
- self rising flour
- granulated sugar
- milk
- egg
- butter
Instructions
- Preheat oven to 350 degrees. Lightly grease your molds or pan and set aside.
- In a bowl, stir together all ingredients. Drop a teaspoon or two of dough into each cake pop, muffin or egg mold.
- Bake at 350 degrees for 12-15 minutes or until pancakes spring back lightly when pressed or a toothpick inserted into the center of the cake pop comes out clean.
- Remove from oven and allow pancake bites to cool for several minutes before moving to a wire rack to finish cooling completely.
Substitutions
You can make some simple substitutions for dietary preferences and needs including:
- Gluten free: Substitute gluten free self rising flour.
- Keto: To make low carb pancakes, substitute keto self rising flour.
- Dairy free: Use dairy free butter and dairy free milk
- Vegan: You will want to substitute plant based butter and plant based milk. You will also want to use egg replacer in place of the eggs. you can make pancake bites without eggs by using a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water) or an egg replacer suitable for baking.
Variations
In place of plain pancakes you can also add some different flavors including:
- Blueberry: Add about ¼-½ cup blueberries to the batter prior to baking.
- Chocolate Chip: Add ½ cup chocolate chips to the batter
- Lemon: Add zest of one lemon to the batter. Add 2 teaspoons poppyseeds for lemon poppyseed version.
- Cinnamon: Add 1 teaspoon cinnamon to the batter
- Cinnamon Apple: Add 1 teaspoon cinnamon and ¼-½ cup thinly diced apples to the batter.
Equipment
A lot of what makes these pancakes unique is the mold you use. You have several options including a stovetop pan, or these molds you can use for baking.
Storing
Your pancake bites can be stored in an air tight bag for several days in the refrigerator or at room temperature. Pancake bites also freeze well. Place them in a single layer on a baking sheet and freeze until solid. Then transfer to a freezer-safe bag or container. They can be frozen for up to 3 months. Reheat from frozen in the microwave or oven.
Serving
Should you dip your pancake bites or drizzle syrup over your pancake bites? Either or is fine. We suggest dipping or drizzling your pancake bites in:
- Maple syrup
- Fruit syrups
- Caramel
- Chocolate (white or chocolate)
- Nutella
- Biscoff
