    Homemade Pizza Lunchables

    Homemade pizza lunchables offer a fun, customizable, and healthier twist on the classic store-bought version. By making them at home, you can control the ingredients and make a delicious great tasting fun lunch!

    This time of year trying to come up with new school lunches the kids will like causes my brain to draw a blank. It seems like January and February roll around and I run out of ideas.

    The kids always enjoy pizza so today I'm featuring a simple and easy lunch that takes just five minutes to prep!

    Ingredients

    For this recipe you will need:

    • Round butter crackers
    • Pepperoni
    • Pizza sauce
    • Mozzarella cheese

    Instructions

    1. Lay out the crackers on a clean work surface.
    2. Spread a thin layer of tomato sauce or pizza sauce onto each cracker, leaving a small border around the edges.
    3. Place a slice of pepperoni on top of the cracker.
    4. Top with a cheese slice. Add your desired toppings, such as bell peppers, sliced olives, diced tomatoes, etc.
    5. For added flavor, sprinkle with fresh basil leaves, dried oregano, or grated Parmesan cheese, if desired.

    Storing

    You will want to store your pizza lunchables until lunch time. Make sure to pack them in your storage container so they can be easily assembled at lunch. I don't suggest assembling them prior to lunch as the sauce can make the crackers soggy. You will also want to make sure to include an ice pack in your lunchbox. We are huge fans of PackIt lunchbags because you don't need extra ice packs--they are built right in!

    We use a couple of different lunchboxes to store them in but the one shown in this picture are the Kid Basix and Safe Snacker.

    My kids love the bento style Safe Snacker made of silicone and stainless steel. When they get home, they put their lunchbag in the freezer and their Safe Snacker in the dishwasher. I love that it's dishwasher safe and the food stays fresh all day!

    Packing

    1. Place the assembled pizza lunchables in an insulated lunch bag or cooler with an ice pack to keep them fresh until lunchtime.
    2. Pack along with some fresh fruit, vegetables, or a side salad for a well-rounded meal.

    Substitutions

    This meal is so easy to adapt for any food allergy or preference!

    • Gluten free: You can make these gluten free lunchables easily by substituting gluten free butter crackers.
    • FODMAP: Use FODMAP friendly pizza sauce (I love Fody Foods!)
    • Vegan: Substitute plant based cheese and plant based pepperoni.
    • Dairy free: Substitute dairy free butter crackers and dairy free mozzarella.

    Variations

    Pack some vegetables like bell pepper, olives, or herbs to place on top of your pizza lunchables!

    Ingredients
      

    • 10 slices pepperoni
    • 5 slices mozzarella cheese
    • 10 whole butter crackers
    • 2 tablespoons pizza or pasta sauce

    Instructions
     

    • In a bento style lunch box, assemble crackers, pepperoni and mozzarella slices. Arrange pizza sauce in a small container and seal. Store in a lunch bag with an ice pack.
    • To assemble your pizza lunchables, place a small amount of pizza sauce on each cracker. Top with pepperoni and cheese slice. Top with additional toppings like bell peppers, olives, or herbs if desired. Eat.

      However for not GF great.

        Hi Olive, I am not sure where you live but they actually do have gluten free (Oreo brand too!) Oreos! I can usually find them at Walmart. I've even seen some people mention that they have found the new gluten free mint Oreos too! YUM!!
