    Making Gluten Free Brownies

    One of our local colleges sells the best mint brownies! I used to love going to football games and buying long cougar tails and mint brownies. Cougar tails were foot long maple bar donuts. They sell super fast at games so if I couldn't find the donut I would buy a mint brownie. Now that I'm gluten free I don't get to enjoy any of those treats at games!

    So I learned to make these delicious mint gluten free brownies at home! And the brownies contain just five ingredients! You can eat the brownies on their own but I highly suggest adding some frosting on top!

    Preheat your oven and prepare your baking dish

    Before you start making your 5 ingredient mint gluten free brownies, it's important to preheat your oven to 350°F and prepare your baking dish. Grease a 9x9 inch baking pan with cooking spray or butter to prevent the brownies from sticking. This will ensure that your brownies cook evenly and come out perfectly every time. Once your oven is preheated and your baking dish is prepared, you're ready to start making your delicious brownies!

    Gather Your Ingredients

    To make these delicious 5 ingredient mint gluten free brownies, you'll need the following ingredients:

    • 1 cup (180g) all-purpose gluten-free flour
    • ½ cup (100g) granulated sugar
    • ¼ cup (50g) unsweetened cocoa powder
    • ½ cup (1 stick) unsalted butter, melted and cooled
    • ½ cup (120ml) milk
    • 1 teaspoon peppermint extract (optional but suggested)

    Mix everything together until fully combined and smooth. Pour the batter into a greased 8x8 inch baking dish and smooth out the top with a spatula. Bake in a preheated 350°F oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool before slicing and serving.     In a mixing bowl, beat together 3 cups powered sugar, ⅓ cup butter softened, 2 tablespoons milk, ½ teaspoon mint extract and several drops of food coloring (if desired). Beat until frosting is able to be spread on brownies. Frost with desired amount of frosting. You can half this recipe if you just want a thin layer of frosting on your brownies.

    Tips

    • For a fudgier brownie, use ¼ cup (60ml) of milk instead of ½ cup (120ml).
    • For a more intense mint flavor, add 2 teaspoons of peppermint extract instead of 1 teaspoon.
    • To make the brownies ahead of time, bake them as directed and then wrap them tightly in plastic wrap or aluminum foil. Store them at room temperature for up to 3 days or in the refrigerator for up to 1 week.
    • To freeze the brownies, wrap them tightly in plastic wrap or aluminum foil and then place them in a freezer-safe bag or container. Freeze for up to 3 months. Thaw overnight in the refrigerator before slicing and serving.

    Can I substitute other types of gluten free flour?

    Yes, you can use other types of gluten-free flour, such as almond flour or coconut flour, but the texture and taste may be different.

    How do I know when the brownies are done baking?

    The best way to determine if the brownies are done is to insert a toothpick or a knife into the center of the pan. If it comes out clean or with just a few crumbs attached, the brownies are done.

    Ingredients
      

    • 1 cup (180g) all purpose gluten free flour

    • In a medium bowl, whisk together the flour, sugar, cocoa powder, and salt.
    • In a small bowl, whisk together the butter, milk, and peppermint extract.
    • Add the wet ingredients to the dry ingredients and stir until just combined.
    • Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the brownies cool completely before cutting into squares and serving.

      Mint and chocolate are my absolute favorite so I had to try these! They were fudgy, soft, and just the right amount of mint. I am making them again for a dinner party tomorrow. YUM!

      We love everything mint in our house, so when my son asked for mint brownies I knew I needed to find a recipe. I found this on pinterest and they just looked so perfectly formed so gave them a go.

      I was not disappointed they were DELICIOUS!!! Mine didn't look quite as neat as yours, I think I needed to wipe my knife between cuts....but boy did they taste good! SO GOOD!
