    Fire up the grill, let's enjoy the last days of summer with this simple five ingredient grilled caprese salad recipe made with your favorite fruits and vegetables! (Gluten free, soy free, nut free, vegetarian)

    Anyone an Office fan out there? Everytime I see a caprese salad recipe now, I always think of The Office!

    But actually, the history of caprese salad is much less complicated. It's an Italian dish that was meant to resemble the Italian flag with:

    • Tomatoes (red)
    • Basil (green)
    • Mozzarella cheese (white)

    On top of the salad you drizzle balsamic vinegar. The recipe can be served cold or grilled like I am serving it today.

    Our ingredient list is super simple today. All you will need is:

    • Vegetables or fruit to grill
    • Mozzarella slices or balls
    • Tomatoes (cherry, heirloom, roma)
    • Fresh basil leaves
    • Balsamic vinegarette

    Fire up the grill to medium high heat and get your vegetables ready! Time to grill the vegetables to perfection! Once the vegetables are grilled, remove them and let them sit for a minute.

    There are a number of vegetables and fruits that work perfect for a caprese salad!

    • Tomatoes
    • Peaches (white or yellow)
    • Peppers
    • Zucchini
    • Apricots
    • Nectarines
    • Pears

    Once your fruits or vegetables are cooked, arrange your tomatoes and fruit. Then sprinkle some mozzarella balls and basil on top. After, drizzle some balsamic vinegarette on top!

    Ingredients
      

    • 1 package mozzarella cheese ball (8 oz pearls or ball)
    • 4 whole tomatoes
    • basil leaves
    • fruits or vegetables see notes
    • balsamic vinegar

    Instructions
     

    • Preheat grill to medium heat. Brush tomatoes and vegetables or fruits with oil prior to placing on grill. Place on grill and grill for several minutes before flipping and cooking on the other side. Remove once cooked and arrange on plate.
    • To assemble: Once your fruits or vegetables are cooked, arrange your tomatoes and fruit. Then sprinkle some mozzarella balls and basil on top. After, drizzle some balsamic vinegarette on top!
