    Gluten Free Macaroni and Cheese Just Four Ingredients!

And it's made with only four ingredients so you won't have any complicated ingredients! (Gluten free, dairy free version, nut free, egg free, soy free, vegetarian, vegan option, FODMAP version)

    the trouble with macaroni and cheese

    One of the hardest things when making macaroni and cheese is feeling like it's making chocolate chip cookies...everyone has their favorite version. So I've been hesitant to post any mac and cheese recipe. I have a few you might like in addition to this recipe:

    Grab just a few ingredients and it's time to cook this classic recipe! You will need:

    • Gluten free macaroni noodles: elbows or shells
    • Cheddar cheese (dairy or dairy free)
    • Milk (dairy or dairy free)
    • Salt and pepper

    can i make this keto?

    Yes! All you need to do is substitute keto noodles. I am not a fan of cauliflower keto noodles which seems to be a major ingredient in keto stuff. I have a link to some of the keto noodles I like right here:

    what about dairy free?

    Absolutely! Just use a dairy free cheddar cheese. There are sooo many good dairy free cheeses out there that I'm sure you'll find a good variety that you like. Here are some of the ones that I've seen out there:

    Dairy Free Cheddar Cheese Shreds

    You can also use a dairy free milk or unflavored creamer. Just make sure not to use vanilla. I've done that before, kind of gives the macaroni a weird taste!

    fodmap

    To make FODMAP friendly macaroni and cheese in this recipe, just use gluten free noodles and dairy free milk. The FODMAP diet says that cheddar cheese is okay.

    vegetarian and vegan

    The recipe in any form is already naturally vegetarian. To make this recipe vegan you just use dairy free milk and cheese!

    Cook up your noodles, then drain. Next you'll mix in the cheese and milk and stir until creamy and smooth! Sprinkle with some salt and pepper and take your fork (or spoon) and dig in!

    storing

    You can store this macaroni and cheese in an airtight container for up to one week. You can also freeze leftovers in a container and store in the freezer for up to one month. I usually like to freeze in individual portions.

    reheating

    To reheat, add 1-2 tablespoons of water or milk per cup of macaroni and cheese. Stir and heat in the microwave at 30 second intervals. Remove from the microwave and stir until smooth.

    Ingredients
      

    • 1 pound elbow or shell pasta
    • 1 cup milk or cream
    • 3 cups shredded cheddar cheese
    • salt and peper to taste

    Instructions
     

    • Cook the pasta according to package directions. Drain and set aside the pasta.
    • In a saucepan, heat the milk on medium heat. Once the milk begins to simmer, add the cheese and stir until smooth.
    • Add the pasta in and stir until creamy and smooth. Serve immediately.
