can i make this keto?
Yes! All you need to do is substitute keto noodles. I am not a fan of cauliflower keto noodles which seems to be a major ingredient in keto stuff. I have a link to some of the keto noodles I like right here:Keto Pasta
what about dairy free?
Absolutely! Just use a dairy free cheddar cheese. There are sooo many good dairy free cheeses out there that I'm sure you'll find a good variety that you like. Here are some of the ones that I've seen out there:Dairy Free Cheddar Cheese Shreds
You can also use a dairy free milk or unflavored creamer. Just make sure not to use vanilla. I've done that before, kind of gives the macaroni a weird taste!
To make FODMAP friendly macaroni and cheese in this recipe, just use gluten free noodles and dairy free milk. The FODMAP diet says that cheddar cheese is okay.
vegetarian and vegan
The recipe in any form is already naturally vegetarian. To make this recipe vegan you just use dairy free milk and cheese!

You can store this macaroni and cheese in an airtight container for up to one week. You can also freeze leftovers in a container and store in the freezer for up to one month. I usually like to freeze in individual portions.
To reheat, add 1-2 tablespoons of water or milk per cup of macaroni and cheese. Stir and heat in the microwave at 30 second intervals. Remove from the microwave and stir until smooth.
