    Irresistible Pumpkin Caramel Cookies

    Pumpkin Spice Everything

    The top shelf of my freezer is full of pumpkin treats. I love fall and I love the combination of pumpkin and spices. Could there really be anything better than pumpkin? Um, no!

    This cookie is a delicious pumpkin cookie with a sweet caramel frosting on top. This pumpkin cookies recipe is one of the softest, moistest cookies I've eaten. If you love pumpkin season why not try some pumpkin coconut soup or chowder? You can even try some pumpkin pancake bites. If you just want more cookies try these pumpkin coconut cookies or pumpkin toffee cookies!

    Gather Ingredients

    The first step in creating these irresistible treats is to make sure you have all the ingredients needed on hand. You will need pumpkin puree, pumpkin pie spice, melted butter, flour, baking powder, salt, and brown sugar. Additionally, you'll need a few ingredients for the caramel frosting. Make sure you gather everything before you start baking!

    Preheat Oven and Grease Cookie Sheet

    Begin by preheating your oven to 350F (175C). Then, lightly grease a large cookie sheet with some butter or a non-stick cooking spray. This will help ensure the cookies come off easily when they’re done baking without sticking to the pan. Make sure you don’t over grease or the edges of the cookies may burn faster than those in the center.

    Mix Flour, Baking Soda and Salt Together In a Bowl

    In a medium sized bowl, whisk together the all-purpose flour, baking soda and a pinch of salt. Please note that the amount of salt used depends on your preferences – some may find that too much or not enough can be added so adjust to taste. Then, add the dry ingredients to the wet mixture, mix with a spoon until fully combined. Your dough should now be ready for use in creating these delicious pumpkin caramel cookies!

    Whip Up Butter, Brown Sugar, Granulated Sugar and Pumpkin Spice Until Fluffy

    In the bowl of a stand mixer, cream together butter and light brown sugar until light and fluffy. To this, add granulated sugar and pumpkin spice and mix to combine. Continue to beat on medium speed while adding in eggs one at a time – ensuring that you mix after each addition. The mixture should increase in volume as you mix - so keep an eye out for fluffiness!

    Add in Eggs and Vanilla Extract

    Slowly add to the mixer eggs, one at a time. Make sure to mix after each addition. Then, turn down the speed and pour in the pure vanilla extract. Keep mixing until everything is nice and combined.

    Bake

    Now it's time to bake! Drop cookies onto a lightly greased cookie sheet or parchment lined baking sheet. Bake until cooked, then remove from oven and allow to cool on the cookie sheet for several minutes before moving to a cooling rack. Frost cookies once they are completely cooled.

    Ingredients
      

    For the Cookies:

    • 1 cup butter softened
    • ½ cup sugar
    • ½ cup brown sugar
    • 1 cup canned pumpkin
    • 1 egg
    • 1 teaspoon vanilla
    • 2 cups unbleached all purpose flour
    • 1 teaspoon baking soda
    • 1 tablespoon cinnamon
    • 1 teaspoon pumpkin pie spice
    • ½ teaspoon salt

    For the Frosting:

    • 3 tablespoons butter
    • ¼ cup heavy cream
    • ½ cup brown sugar
    • 1 cup powdered confectioners sugar
    • 1 teaspoon vanilla

    Instructions
     

    To Make the Cookies:

    • Preheat oven to 350 degrees. In a mixing bowl, cream the sugars and butter together until fluffy. Slowly add the vanilla and eggs and scrape the bowl as necessary.Stir in the pumpkin, flours, soda, salt and spices until mixture is well combined.
    • Drop by tablespoon onto lightly greased cookie sheet. Bake at 350 degrees for 10-12 minutes. Remove from oven, and while cookies are still warm, press down lightly on each cookie with the back of a cup to flatten slightly. Allow cookies to cool for several minutes on the cookie sheet before moving to a cooling rack to cool completely.

    To Make the Frosting:

    • In a saucepan, heat butter, brown sugar and cream until mixture comes to a rolling boil. Remove from heat and allow mixture to cool. Once mixture has cooled, add the powdered sugar and vanilla and stir until powdered sugar is incorporated.. Frost each cookie, allowing frosting to set up before stacking cookies if desired.
