A simple and easy meal for slow cooker sesame honey chicken--a classic favorite!
I often ask the kids what they want for dinner when doing my weekly meal plans. The answer my son gives over and over again is "I want that sesame chicken. It's the BEST!"
It truly is. It's simple to throw in the slow cooker on my way to work and when you come in the door at night it smells delicious. I then throw some rice into my Hamilton Beach Rice Cooker while I help kids with homework and I change into my mommy yoga pants and then we sit down to dinner.
I am such a good Mom too. I just plunk down the rice cooker and the slow cooker full of slow cooker sesame honey chicken, some serving spoons and then the kids get to pick and choose how much they want to eat and what toppings they want. They fight over who gets to serve up their food first, and I go act as ringleader on who actually gets the serving spoon first. Most of the time they go crazy with the sesame seeds. My kids usually shy away from anything with the word "seeds" in it, thinking they might become birds (my kindergartener), die, (my 11 year old) or it might get stuck in her teeth (the 14 year old). But sesame seeds seem to be the one thing that they love. I like a little bit of green onion on my chicken too. My son loves garlic and this recipe has the option to add some more if you want.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup honey
- ½ cup soy sauce or Bragg's Liquid Aminos
- ½ cup diced onion
- ¼ cup ketchup
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- ¼ teaspoon red pepper flakes
- 2 teaspoons cornstarch or arrowroot powder dissolved in 3 tablespoon water
- Salt and Pepper to taste
- Sesame seeds
- Diced green onion
- 1-2 cups cooked brown or white rice
Instructions
- Place the chicken into a lightly greased slow cooker. In a bowl, mix together the honey, soy sauce or Bragg's, onion, ketchup, oil, garlic and red pepper flakes. Pour over the top of the chicken.
- Cook on low for 4-6 hours or high for 3-4 hours, just until chicken is cooked.
- during the last half an hour of cook time for the chicken, prepare the rice using preferred method.
- When chicken is cooked, remove from the chicken from the slow cooker to a plate. Shred the chicken.
- In a small bowl mix together the cornstarch and water, then mix into the slow cooker with the remaining sauce. Pour shredded chicken back into the slow cooker.
- Serve sauce and chicken over rice. Garnish with salt and pepper, sesame seeds and green onions as desired.
