    Ingredients

    The ingredient list you will need is nice and short too! All you need is:

    • Self rising flour
    • Sugar
    • Milk
    • Blackberry puree
    • Powdered sugar

    That's only FIVE ingredients!

    Instructions

    • Make the puree: The puree is simple and easy to make. Just place blackberries in a blender and puree until smooth. Then use the puree in the recipe as directed to make your donut recipe. Pour the donut mixture into the molds then bake.
    • Start your glaze: Once the donuts have baked and cooled, glaze them! You just need to add some powdered sugar to the blackberry puree and then lightly dip each donut in the glaze. Let it set up then serve your donuts!

    Substitutions

    There are a couple of substitutions you may need to make in order to make these blackberry donuts for any dietary needs or preferences.

    • Gluten free: To make these donuts gluten free, you will want to use gluten free self rising flour. You could also use some self rising keto flour too.
    • Dairy free: Substitute dairy free milk in place of the regular milk. This will also make these donuts vegan too!

    Tips

    • Mix Gently: When combining the wet and dry ingredients, mix just until combined. Overmixing can result in dense, tough donuts.
    • Easy Filling: Using a piping bag or a zip-top bag with the corner cut off makes filling the donut pan much easier and results in neater donuts.
    • Grease the donut pan: Ensure your donuts release easily from the pan by lightly greasing the molds with cooking spray or oil prior to cooking.

    Variations

    • Vanilla Extract: Add 1 teaspoon of vanilla extract to the batter for extra flavor.
    • Zest: Add the zest of one lemon to the batter for a bright, citrusy note.

    Storing

    Store the donuts in an airtight container at room temperature for up to 2 days. For longer storage, keep them in the refrigerator for up to a week. You can also freeze the donuts for up to 3 months; thaw them at room temperature or warm them in the microwave before serving.

    Should I use fresh or frozen blackberries?

    Either are fine to use. Fresh blackberries provide a vibrant flavor and color. They are best used when in season for maximum sweetness. Frozen blackberries are a convenient alternative and are available year-round. Thaw them completely and drain any excess liquid before mashing.

    What if I don't have a donut pan?

    If you don’t have a donut pan, you can use a muffin tin. Place a small ball of foil in the center of each muffin cup to create a hole, and fill the cups with batter around the foil. The shape won't be perfect, but the donuts will still be delicious.

    Equipment

    • donut pan

    Ingredients
      

    • 1 ½ cup self rising flour
    • 2 tablespoons granulated sugar
    • ½ cup milk can substitute dairy free
    • ¼ cup blackberry puree

    For the Frosting

    • ⅓ cup blackberry puree
    • 1 cup powdered sugar

    Instructions
     

    • Preheat oven to 350 degrees. In a bowl stir together the self rising flour, sugar, milk and puree until smooth.
    • Lightly grease the donut pans, then pour batter into the donut pans, filling halfway. Bake at 350 degrees for for 15-17 minutes. Remove from oven, allow to cool in pan for several minutes, then remove donuts from mold and place on cooling rack to finish cooling completely.

    To Make The Frosting

    • Stir together the puree and powdered sugar. Dip the tops of the donuts in the glaze, then place on a cooling rack to allow glaze to set.
