Honey Pecan Milkshake

This time of year is so confusing. One minute you can taste summer in the air with the warm breeze and sunshine on your skin. The next minute a cold winter like storm rushes through reminding you it’s not going out without a fight.

Today, I’m celebrating summer just around the corner with this delicious honey pecan milkshake. My sister in law came into town and she is currently doing the AIP protocol because of severe allergies and stomach health issues. For our girls weekend we needed to have something everyone could eat (she was also frustrated because this protocol has been overwhelming for her and she just wants treats!), so we went with these delicious honey pecan milkshakes. They worked as the perfect AIP diet milkshake. They can also be made dairy free and thank heavens ice cream is gluten free!

These milkshakes don’t come courtesy of me. Erin from the Spiffy Cookie actually came up with the creation! I’m suprising her this month as part of the Secret Recipe Club. In addition to this milkshake recipe, I fell in love with some of her other recipes that would pair perfect for these “transitional” weather days:

Enjoy! This is a simple and easy recipe that was nice for us because we didn’t have to buy a ton of different ingredients to serve a variety of dietary restrictions. Thanks Erin for this delicious recipe!

Honey Pecan Milkshake

Yield: 1 large or 2 small milkshakes

Ingredients

  • 3 large scoops vanilla ice cream (you can substitute dairy free versions)
  • 1/2 cup milk (dairy free substitutions okay)
  • 2 tbsp chopped pecans
  • 1 tbsp honey (plus additional honey or drizzling)
  • Cinnamon, for garnish

Instructions

  1. Place your glass(es) in the freezer to chill for 10-15 minutes.
  2. In a blender, combine the ice cream, milk, pecans and honey. Blend until pecans are ground and milkshake is blended well (30 seconds to one minute).
  3. Remove the glasses from the freezer and drizzle honey around the inside rim of the glass for decoration. Pour the milkshake in the glass(es).
  4. Top with a little bit of cinnamon and an additional pecan.
  5. Serve immediately.

Notes

Those following the AIP diet will need to eliminate the pecans. You can use coconut ice cream if tolerated.
