I almost ate the whole pan by myself–not hard to do when you’re the only one in the family eating gluten free. The past couple of weeks have been really rough. Life has thrown more curveballs than I can catch. I’ve been sick again too from all the stress and once I began to turn the corner and started feeling better I knew that I wanted….chocolate.

It’s my favorite food group to drown my sorrows and stress into. Chocolate listens. It understands. It KNOWS me.

Gluten Free Skillet Blondies


  • 6 tbsp butter
  • 1 cup coconut sugar or brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup chocolate chips
  • 1/2 cup chopped walnuts


  1. Preheat oven to 350 degrees. Lightly grease your skillet (if you don't have a skillet I use an 8" or 9" round pan).
  2. In a bowl of a mixer, cream the butter and sugar on medium speed for 2-3 minutes, or until light and fluffy.
  3. Turn mixer to low, add the egg and vanilla, stirring until blended.
  4. Add the flour, baking powder and salt, continuing to mix until combined.
  5. Turn mixer off, fold in the chocolate chips and walnuts.
  6. Pour the mixture into the skillet or pan, using a spatula to evenly spread the batter in the pan.
  7. Bake at 350 degrees for 20-25 minutes, or until lightly browned around the edges and the center is cooked.
  8. Remove from oven, cut while warm into pieces. Serve topped with fresh ice cream and whipped topping if desired.
