    • ¾ cup unsalted butter softened
    • 2 eggs
    • 1 teaspoon almond extract optional
    • 1 teaspoon vanilla extract

    Instructions
     

    • Preheat your oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set it aside.
    • In a large mixing bowl, cream the softened butter and sugar together until light and fluffy. This should take about 2-3 minutes using a hand mixer or stand mixer.
    • Add in the eggs, one at a time, mixing well after each addition.
    • Add in the vanilla extract, and mix until combined.
    • In a separate mixing bowl, whisk together the cake mix and other dry ingredients.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • Fold in the rainbow sprinkles, using a spatula.
    • Use a cookie scoop or spoon to drop the dough onto the lined baking sheet, leaving about 2 inches of space between each cookie.
    • Bake the cookies for 10-12 minutes or until the edges are golden brown.
    • Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

    Store the cooled cookies in an airtight container at room temperature for up to 5 days.
