    Ingredients

    It's a simple recipe for these cookies. All you need is:

    • 2 ½ cup funfetti cake mix recipe
    • ¾ cup unsalted butter, softened
    • 2 eggs
    • 1 tsp almond extract (optional)
    • 1 tsp vanilla extract
    • 1 tsp baking powder

    Instructions

    1. Preheat your oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set it aside.
    2. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy. This should take about 2-3 minutes using a hand mixer or stand mixer.

    6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    7. Fold in the rainbow sprinkles, using a spatula.
    8. Use a cookie scoop or spoon to drop the dough onto the lined baking sheet, leaving about 2 inches of space between each cookie.
    9. Bake the cookies for 10-12 minutes or until the edges are golden brown.
    10. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
    11. Store the cooled cookies in an airtight container at room temperature for up to 5 days.

    Tips for Making Funfetti Cookies:

    1. Use rainbow sprinkles for the best effect. You can find them at most grocery stores in the baking aisle.
    2. Be sure to cream the butter and sugar together for a few minutes until light and fluffy. This will help give the cookies a nice texture.
