    Are the dog days of summer upon you? It's time to break out those salad recipes! This gluten free chicken mango salad has lot's of flavor and you can make it with just five ingredients! Grilled chicken breasts are placed on a bed of lettuce, then your favorite ingredients like mango, avocado, cheese and more are added! (Gluten free, dairy free option, soy free, nut free, coconut free option)

    A light and easy chicken recipe made with simple ingredients!

    You can't go wrong with this meal! It's nice and customizable to what you love in your salad!

    • Chicken
    • Seasoning
    • Lettuce
    • Dressing
    • Vegetables like bell peppers, shredded carrots, onion, tomatoes, cilantro
    • Fruits like shredded coconut, diced mango, diced pineapple, avocado
    • Cheese--feta, cojita, cheedar or dairy free cheese

    Seasoning your chicken mango salad

    What should you season your chicken with? Pretty much anything you like! I used Stovetop Yum's Holy Mango to keep with the mango theme. But really any type of seasoning works great! I've used a spicy blend and have even just forgotten to put seasoning on before!

    Ingredients
      

    • 1-2 lb chicken tenders seasoning optional
    • 4 cups shredded lettuce
    • 2 cups assorted toppings

    Instructions
     

    • Grill chicken tenders until thoroughly cooked.
    • While the chicken is cooking, assemble the salad. First layer the lettuce, then add toppings. Place cooked chicken on top then drizzle with desired dressing. Serve.

    Storage:
    This salad can be stored in the refrigerator for 1-2 days.
