Pesto Yesto!
Every good pesto pasta recipe starts with a good pesto that is going to enhance the flavor of every bite of your salad! But recommending pesto feels like recommending chocolate chip cookies to someone. Have you ever tried to make chocolate chip cookies for someone? Some people like the poofy bakery style cookies. Others like the thin and crispy chocolate chip cookies. Some like a ton of chocolate chips while others like hardly any. Pesto is like this too! Some people are fine with jarred pesto while others say refrigerated. Some swear by only homemade pesto sauce.
Guess what? YOU get to choose your favorite type of pesto for this recipe!
BUT here are a few pesto recommendations for those of you who might have food allergies or intolerances and needing to make a few substitutions.
FODMAP Friendly Pesto
If you get stomach upset from different foods, you'll want to know if pesto is stomach friendly. And according to Monash University, it is. In small doses. But if small doses just aren't your thing, you can try our FODMAP friendly pesto.

Let's get started! You will need:
- Penne pasta (you can substitute gluten free)
- Pesto
- Sundried tomatoes or petite diced tomatoes
- Mozzarella pearls
Make it a Meal
Just add some chicken, fish, steak or plant based meat to make this a meal!
Storing
After making up the salad, it can be stored in an airtight container for several days.
Drying Out
If your pasta salad seems to dry out a little bit after storing, (this is usually due to the noodles absorbing the pesto oils) then just add a little more pesto and stir it into the pasta.
