Welcome to the dog days of summer. My dog hogs the air conditioner vents, takes up real estate on the couches and acts like it’s drudgery to have to go outside in the heat.

So we pack ourselves up and head to the canyon to get her into the water. Or head to the mountains to go hiking to cool her off. It’s a great way to keep her cool. She will also opt for a night time car ride with the windows down and her ears and tongue flapping.

A few weeks ago I made a healthy cherry limeade smoothie for breakfast. After making the smoothie, there were still extra limes and cherries left over and my sweet tooth started kicking in. Cookies sounded amazing!

White Chocolate Cherry Limeade Cookies

  • 2 1/4 cup unbleached all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup (2 sticks) butter, softened
  • 1 1/2 cups sugar
  • 1 tsp vanilla extract
  • Zest of one lime
  • 2 eggs
  • 2 cups white chocolate chips
  • 1 cup dried cherries or fresh chopped cherries

  1. Preheat oven to 350 degrees. Lightly grease a cookie sheet and set aside.
  2. In a bowl, stir together the flour, baking soda and salt, then set aside.
  3. In a mixing bowl, cream together the butter and sugar until light and fluffy (2-3 minutes) in a mixing bowl set to medium speed. Reduce mixer speed to low, then add in the vanilla, lime zest, and eggs; stirring until combined.
  4. Fold in the white chocolate chips and cherries.
  5. Drop the dough by tablespoons, rolling dough into a ball before placing the dough on the cookie sheet. Leave several inches of space in between cookies.
  6. Bake at 350 degrees for 8-10 minutes, or until cookies are lightly browned.
  7. Remove cookies from oven and allow to sit on baking sheet for several minutes before moving to a cooling rack to finish cooling completely.
  8. Drizzle or dip cookies in white chocolate if desired.
