Cinco de Mayo is one of my favorite times of year! Summer is my favorite season and Cinco de Mayo feels like it's one of the first seasons of the summer for me. It's fun to celebrate and eat some incredible flavors of summer!
Easy Chicken Tacos
Chicken tacos are a perfect addition to your Cinco de Mayo celebration! With only five ingredients, they are quick to make and delicious to eat. Simply cook shredded chicken with taco seasoning, warm up some tortillas, and top with your favorite toppings like lettuce, cheese, and salsa. Serve with a side of rice and beans for a complete meal.

Simple Guacamole
This simple guacamole recipe is perfect for any Cinco de Mayo celebration. All you need is ripe avocados, lime juice, salt, diced tomatoes, and chopped cilantro. Mash the avocados in a bowl, add the lime juice and salt, and mix well. Then, fold in the diced tomatoes and chopped cilantro. Serve with tortilla chips or as a topping for your favorite Mexican dish.
- 2 ripe avocados
- 1 lime
- ¼ teaspoon salt or garlic salt
- ¼ cup diced tomatoes
- 1 tablespoon chopped cilantro (optional)
Instructions:
- Cut the avocados in half and remove the pit. Scoop the flesh into a bowl.
- Squeeze the lime juice over the avocado and mash with a fork.
- Add the salt and garlic powder and stir to combine.
- If desired, add the chopped cilantro and mix well.

Spicy Salsa
Spice up your Cinco de Mayo celebration with this easy 5-ingredient spicy salsa recipe. All you need is diced tomatoes, diced jalapenos, chopped cilantro, lime juice, and salt. Mix all the ingredients together in a bowl and let it sit for at least 30 minutes to allow the flavors to come together. Serve with tortilla chips or as a topping for tacos or quesadillas.
- 4 ripe tomatoes
- 1 jalapeno pepper
- ¼ cup chopped red onion
- 2 tablespoons lime juice
- ¼ teaspoon salt
- 1 tablespoon chopped cilantro (optional)
Instructions:
- Cut the tomatoes into quarters and remove the seeds.
- Dice the jalapeno pepper and remove the seeds if you prefer less heat.
- In a blender or food processor, combine the tomatoes, jalapeno pepper, red onion, lime juice, and salt. Pulse until the desired consistency is achieved.
- Taste and adjust the seasoning as needed.
- Serve immediately or cover and refrigerate until ready to serve.
One of my favorite variations on this salsa recipe is watermelon salsa. It's nice and summery! I also like this watermelon jicama salsa. When I want a light summery dessert, this blueberry salsa dessert is perfect!
Margaritas and More!
No menu of recipes for Cinco de Mayo is complete without a classic margarita cocktail! All you need is tequila, lime juice, orange liqueur, and simple syrup. Mix all the ingredients together in a shaker with ice and strain into a salt-rimmed glass. Garnish with a lime wedge and enjoy! For a twist, try adding fresh fruit like strawberries or mango to the mix.
If you're looking for a mocktail, you can make a margarita easily sans alcohol! You can also try a twist on summery lemonade by serving some blue curacao lemonade!
- ½ cup fresh lime juice
- ¼ cup honey
- ½ cup orange juice
- 1 cup sparkling water or tonic water
- Ice
Instructions:
- In a small saucepan, heat the lime juice and honey over medium heat until the honey has dissolved. Remove from heat and let cool.
- In a pitcher, combine the lime and honey mixture with the orange juice and sparkling water. Stir well.
- Fill glasses with ice and pour the margarita mocktail mixture over the ice. You can also place the ingredients in a cocktail shaker and mix then pour into glasses.
- Garnish with lime wedges or salt, if desired.
Don't Forget Dessert!
Every good Cinco de Mayo celebration needs to end with some dessert! Try some refreshing Mexican sno cones with mango syrup! Or dig your fork into some Mexican chocolate brownies for one! Change the traditional dessert up by serving some guava cream cheese tarts! (We even made them gluten free and dairy free!)
