Family Sized BBQ Chicken Salad

Spring is around the corner and salads just start to sound good. They are simple and easy to make and perfect for the whole family. This family sized BBQ chicken salad doesn’t need to wait until summer–it’s perfect anytime of the year!

My daughter has been in the school play and juggling all her many projects. Soccer season is starting and practices are back twice a week for my son. My four year old willingly trudges along in the car singing songs and greeting and saying good bye to her big brother and sister.

I know that a quick and easy healthy meal is important for our family to fuel us through all of the activities we have going on. But it also has to taste good too and this salad is one that I can usually get the family eating without complaint. Especially if there is ranch dressing involved.

Family Sized BBQ Chicken Salad

Ingredients

  • 6 cups chopped lettuce
  • 2 boneless, skinless chicken breasts cooked and cut into bite sized pieces
  • 2-3 slices bacon, cooked and cut into bite sized pieces
  • 1 tomato, diced
  • 1 cup corn kernels
  • 1 cup black beans (cooked, or drained and rinsed if canned)
  • 1/4 cup red onion, cut into tiny bite sized pieces
  • 1/4 cup cheddar or monterrey jack cheese, shredded
  • 1/4 cup BBQ sauce
  • 1/4 cup ranch dressing
  • Tortilla strips, for garnish

Instructions

  1. To assemble the salad: Layer the romaine lettuce in a large salad bowl. Top the salad with the chicken, bacon, tomato, corn, black beans, onion, and cheese. In a small bowl mix together the BBQ sauce and ranch dressing than drizzle over the salad.
  2. Toss the salad prior to serving, garnish salad with tortilla strips.
