Beautiful sweet and tart gluten free raspberry rolls made with seven ingredients, ready in under thirty minutes and no yeast!

Flour Needed
For this recipe you will need gluten free self rising flour. We recommend using one of these recipes. You will need self rising flour or the recipe will not work.
Ingredients
Flour
Again, you will want to use gluten free self rising flour. No substitutions on this one, sorry.
Yogurt
You can use greek yogurt or non dairy yogurt. Use PLAIN flavored yogurt only.
Raspberries
You can use fresh or frozen raspberries for this recipe.
Sugar
You are welcome to use regular granulated sugar and powdered sugar or sugar free alternatives.
Storing
For best results:
- Store rolls in an airtight container in the refrigerator for several days.
- Freeze rolls in an airtight container or Ziploc bag for up to several months. Reheat rolls in the microwave for 30-45 seconds per roll.
Gluten Free Raspberry Rolls
Sweet and tart delicious raspberry rolls made with 7 ingredients and ready in under 30 minutes!
Ingredients
- 1 ¾ cup gluten free self rising flour
- 1 cup plain greek yogurt
- ½ cup + 2 tsp granulated sugar can substitute sugar free alternative
- ¼ cup butter softened or melted
- 1 cup fresh or frozen raspberries
- 1 cup powdered sugar can substitute sugar free alternative
- water
Instructions
- Preheat oven to 350 degrees. Lightly grease an 8x8 inch pan and set aside.
- In a mixing bowl, stir together the flour, greek yogurt and 2 teaspoons sugar until mixture forms a ball. (You may need to add 1-2 tablespoons of water if needed)
- Lightly flour a kitchen surface. Using a rolling pin, roll the dough out to ¼ inch thickness and approximately 18 inches x 12 inches. Spread butter evenly over the dough.
- In a bowl, stir together the ½ cup sugar and raspberries. Sprinkle raspberries over dough.
- Roll the dough up and slice into approximately twelve rolls. Place in pan.
- Bake rolls at 350 degrees for 20-25 minutes until lightly browned and centers are cooked.
- Remove rolls from oven. Allow rolls to cool for several minutes before frosting.
- To make the frosting: Stir powdered sugar with 1-2 tablespoons of water. Spread glaze over the rolls.
