    I’m going bananas today!! This simple banana bread with self rising flour is a-mazing! 

    This recipe boasts loads of banana, and a hint of cinnamon in every bite! This recipe has no eggs, no milk, no oil, no butter and each loaf turns out a moist delicious homemade banana bread loaf!

    Ingredients

    I’m making life easy today by using only five ingredients to make this banana bread. I’ve made it with gluten free flour and regular flour and it works great!

    • Bananas
    • Condensed milk
    • Self rising flour
    • Cinnamon
    • Walnuts (optional) 

    Substitutions

    • Dairy free: For a dairy free version, use dairy free sweetened condensed milk.
    • Gluten free: You will want to substitute Gluten Free Self Rising Flour in place of the flour.
    • Vegan: You will want to use a plant based sweetened condensed milk.
    • Low carb: For a low carb version, use our Keto Self Rising Flour.
    • Low sugar: You can use a sugar free sweetened condensed milk.

    Storing

    • Room Temperature: Can be stored in an airtight container at room temperature for up to three days.
    • Refrigerator: Store in an airtight container in the refrigerator for up to one week.
    • Freezer: Place sliced bread in an airtight freezer safe container or freezer ziploc bag and store for up to three months. 

    To Thaw

    Allow bread to come to room temperature or microwave for 10-15 seconds per slice.

    Can you mash bananas with a mixer?

    I love mashing bananas this way. (I'm lazy...this is the easiest way for me). Just put your bananas in a mixer and mix for 1-2 minutes until the bananas are mashed.

    How ripe should the bananas be?

    The bananas should be very ripe, with lots of brown spots on the peel. This ensures maximum sweetness and a moist texture.

    How do I prevent the bread from being too dense?

    Avoid overmixing the batter. Stir just until the ingredients are combined to keep the bread light and fluffy.

    Can I substitute the sweetened condensed milk?

    Sweetened condensed milk is crucial for sweetness and moisture in this recipe. If you must substitute, try using an equal amount of evaporated milk plus ½ cup sugar, but the texture may differ slightly.

    Equipment

    • mini bread pan, muffin cups, or 9x5 inch bread pan for baking

    Ingredients
      

    • 1 ½ cups mashed bananas approximately 3-4 bananas
    • ¾ cup sweetened condensed milk
    • 1 ½ cups self rising flour
    • ½-1 teaspoon cinnamon
    • ½ cup chopped walnuts optional

    Instructions
     

    • Preheat oven to 350 degrees. Lightly grease one loaf pan or two mini loaf pans and set aside.
    • Mash your bananas (see instructions below) until pureed. Add the sweetened condensed milk and stir. Add in the flour and cinnamon and stir until smooth. Fold in the walnuts if using.
    • Pour the batter into the loaf pan or divide between the two mini loaf pans. Bake at 350 degrees for 20-25 minutes for mini loaf pans or 35-40 minutes for the larger loaf pan. Bread is done when a toothpick or skewer inserted into the bread comes out clean.
    • Remove banana bread from the oven and allow it to cool in the pan. Once cooled, remove bread and cut into slices.

    9x5 inch loaf pan: 45-55 minutes
    Mini loaf: 25-35 minutes
