With soccer season and everything else going on, simple desserts are the best desserts. These no bake oatmeal toffee bites are simple and easy no bake cookies that are ready in a few minutes.
I love having them in the freezer and having one ready for the kids right after a soccer game. It's a great post game treat and energy help.
This week is spring break and we are enjoying having nothing to do. We're spending part of the week down in one of our favorite places. It's nice to relax and unwind. I love my morning workouts. If you follow on Instagram be prepared to be bombarded with my scenic morning runs. And become jealous...very jealous. While of course snacking on these.
Ingredients
- 1 cup oats (use gluten free if needed)
- 2 tbsp ground flax seed (use additional 2 tbsp oats if needed or 2 tbsp chia seeds)
- ¼ cup almond, peanut or sunflower butter
- ¼ cup maple syrup or honey
- 1 tsp vanilla extract
- ½ cup toffee chips
Instructions
- In a food processor, place the oats and flax seed or chia seeds. Pulse until the the mixture resembles flour. Add the nut butter, maple syrup or honey and vanilla extract, pulse grinding until smooth.
- Scoop the mixture into a bowl and fold in the toffee bits. Roll the mixture into tablespoon sized balls.
- Place the balls into an airtight container. PLace in the refrigerator for several days or freeze for up to one month.
