Making Funfetti Cake Mix
My daughter has been dying to learn to cook, but with my history in the kitchen, I decided we better start very, very slow.
Since we make a lot from scratch and not from mixes I came across this homemade mix that has a lot better ingredients than the boxed mixes. We bought my daughter a Babycakes donut maker for her birthday so she could join me in the kitchen.
If you don't have a donut maker, don't worry! We also use our mini muffin pan.
Making Your Own Cake Mix
This copycat recipe for Pillsbury Funfetti dry cake mix is a great way to save money and enjoy your favorite treat without having to buy the boxed mix. Combine the Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, and salt. Make sure to remove any lumps in the mixture.
Add Sprinkles
Gently fold in the rainbow sprinkles, making sure not to break them up too much. You want them to remain intact and provide a pop of color in your baked goods.
Store the Mix
Transfer the mix to an airtight container or resealable plastic bag. Label the container or bag with the date and the ingredients used. The mix will keep for up to 6 months in a cool, dry place.
Using the Mix
When you're ready to use the mix, follow the instructions on a boxed Funfetti cake mix, adding the necessary liquid ingredients, eggs, and oil. You can also use this mix to make cupcakes, sugar cookies, or even a funfetti cheesecake.
Substitutions
If you'd like to make a smaller batch of the mix, simply divide the ingredients in half. The recipe can also be easily doubled if you want to make a larger amount of mix to store for later.
For a gluten free version just use a gluten free flour blend. Make sure your recipe contains xanthum gum!
For a vegan and dairy free version: Substitute dairy free butter, egg replacer and dairy free milk.

Ingredients
- 3 cups cake flour To Make Your Own Cake Flour: Use 3 cups unbleached all purpose flour. Take out six tablespoons of the flour, then add in six tablespoons of cornstarch.
- 1 ½ cups sugar
- 4 teaspoon baking powder
- ½ teaspoon salt
- ⅓ cup rainbow jimmies
Instructions
- In a large bowl, mix together the ingredients above until well combined. Place in a large plastic ziploc bag or mason jar to store. Mix will store for several months in a jar or up to six months in the freezer.
