Copycat Gluten Free Pillsbury Funfetti Cake Mix

Published: Jan 25, 2013 · Modified: Sep 20, 2023 by burntapple · This post may contain affiliate links · 5 Comments

Funfetti cake mix is a popular and beloved treat that can easily be made at home with a few simple ingredients. This copycat version can be made gluten free and substitutes for one box of the storebought dry cake mix!

A bowl of white Funfetti cake mix with colorful sprinkles mixed throughout. The dry mix is in a mason jar.

    Making Funfetti Cake Mix

My daughter has been dying to learn to cook, but with my history in the kitchen, I decided we better start very, very slow.
Since we make a lot from scratch and not from mixes I came across this homemade mix that has  a lot better ingredients than the boxed mixes.  We bought my daughter a Babycakes donut maker for her birthday so she could join me in the kitchen.

If you don't have a donut maker, don't worry! We also use our mini muffin pan.

    Making Your Own Cake Mix

This copycat recipe for Pillsbury Funfetti dry cake mix is a great way to save money and enjoy your favorite treat without having to buy the boxed mix. Plus, you can control the ingredients and make the mix gluten-free or vegan by using alternative ingredients. So, have fun with it and create something delicious!

    Combine the Dry Ingredients

In a large bowl, whisk together the flour, sugar, baking powder, and salt. Make sure to remove any lumps in the mixture.

    Add Sprinkles

Gently fold in the rainbow sprinkles, making sure not to break them up too much. You want them to remain intact and provide a pop of color in your baked goods.

    Store the Mix

Transfer the mix to an airtight container or resealable plastic bag. Label the container or bag with the date and the ingredients used. The mix will keep for up to 6 months in a cool, dry place.

    Using the Mix

When you're ready to use the mix, follow the instructions on a boxed Funfetti cake mix, adding the necessary liquid ingredients, eggs, and oil. You can also use this mix to make cupcakes, sugar cookies, or even a funfetti cheesecake.

    • Cake Batter Rice Krispies

    Substitutions

If you'd like to make a smaller batch of the mix, simply divide the ingredients in half. The recipe can also be easily doubled if you want to make a larger amount of mix to store for later.

For a gluten free version just use a gluten free flour blend. Make sure your recipe contains xanthum gum!

For a vegan and dairy free version: Substitute dairy free butter, egg replacer and dairy free milk.

How do you like your donut baker, I keep looking at them and just can't decide if I will really use it or if it will be just another one of those kitchen gadgets.

We love ours and use it at least once a week. We love experimenting with new variations. We got ours at bed bath and beyond for $20 with a 20 percent off coupon. So I wasn't too stressed if she didn't end up liking it. But we love it!

I am LOVING that you made doughnuts out of your homemade funfetti mix! I have to try something like that. 🙂 Waking up to sprinkles + doughnuts sounds like heaven right now.
