Double Chocolate Coconut Sugar Cookies

I went missing in action for a few days. It was good that I did really. Sometimes you just need to step away. Sometimes you just need to bake yourself some cookies and wallow away for a little bit in some chocolate therapy.

Of course, life has seemed like one big case of chocolate therapy for me lately. Although it's been full of ups and downs, I'm learning so much. Life throws plenty of curveballs, and it's thrown a huge one. I find that during life's trials, you have to look harder for those moments that are positive and keep you going.

Tonight would be one. After a week of struggling with my teen and feeling like I was putting the weight of the world on her young teen shoulders, I was volunteered (happily) to be the designated carpooler for a car full of exuberant teens. It was good to hear her laugh and catch up with her friends. It was good to see her smile and be a teen.

A few of these delicious double chocolate chip coconut sugar cookies made it to my plate tonight. I usually keep them in the freezer so I can pull them out to eat whenever I need one.

*Note: These cookies were sprinkled with Easter colored chocolate pieces prior to cooking.

Double Chocolate Coconut Sugar Cookies

Ingredients

  • 2 cups unbleached all-purpose flour or gluten free flour
  • ¾ cup cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup butter, softened
  • 1 ⅓ cup coconut sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 cups chocolate chips (we used Enjoy Life)

Instructions

  1. Preheat oven to 350 degrees. Lightly grease a cookie sheet and set aside.
  2. In a bowl, stir together the flour, cocoa powder, baking soda and salt. Set aside.
  3. In a mixing bowl, cream together the sugar and butter until light and fluffy on medium speed. Once mixture is light and fluffy, turn mixer to low and stir in the vanilla and eggs, stirring until combined.
  4. Stir in the flour mixture, continuing to mix until combined. Fold in the chocolate chips.
  5. Drop tablespoon sized dough onto the cookie sheet. Bake at 350 degrees for 9-11 minutes. Remove from oven, cool on baking sheets for 2-3 minutes until moving cookies to a wire rack to finish cooling completely.
