Yogurt and Herb Chicken

While the website might have seemed to be quiet these past couple of weeks, behind the scenes it has been anything but quiet. Life has been up and down with crazy twists, turns, challenges and battles.

School starts this week and the craziness continues! It’s also nice that my schedule will become more…scheduled. If that makes any sense. The summer can be so hard to keep and maintain a schedule on. I’m looking forward to the kids being busy and not complaining about being “bored.”

This meal is a nice one to serve on busy weeknights. It comes together quickly and has a nice creamy texture that the kids love while still being healthy.

serve it on top of a bed of spiralized zucchini noodles or on top of pasta or rice and it’s a hit!

Yogurt and Herb Chicken

Yield: 4 servings

Serving Size: 1 chicken breast


  • 4 boneless, skinless chicken breasts
  • 4 tbsp oil
  • 2 cloves garlic, minced
  • 1 cup parmesan cheese
  • 2 cups nonfat plain greek yogurt
  • 2 tbsp chives, diced
  • 1 tbsp fresh or dried thyme
  • Salt and pepper to taste
  • Spiralized zucchini noodles, pasta or brown rice for serving


  1. Preheat the oven to 375 degrees. Lightly grease a 9x13 inch baking pan and set aside.
  2. In a skillet set to medium heat, cook the garlic and oil for several minutes or until garlic becomes tender and slightly browned.
  3. Add the chicken breast to the skillet and cook for about 3-5 minutes each side to brown the meat. (But do not fully cook).
  4. While the chicken is cooking, in a medium mixing bowl stir together the yogurt, cheese, chives, herbs and salt and pepper. Stir until combined and set aside.
  5. When chicken has browned, remove from skillet and place in the casserole dish. Top with the yogurt mixture, then cover the chicken. Place the chicken in the oven and bake for 25-35 minutes or until chicken is no longer pink and reaches appropriate internal cooking temperature.
  6. Remove chicken from oven and serve chicken on top of spiralized zucchini noodles, pasta or brown rice. Spoon additional sauce over the top of the chicken and noodles, pasta or rice.
