    Craving a warm, comforting meal? Look no further than this easy and simple potato and corn chowder recipe. This creamy, delicious chowder is packed with tender potatoes, sweet corn, and savory broth. It's then simmered to perfection. Best part? You only need five ingredients to make this soup!

    This recipe is very popular during the winter. It's comforting and helps you warm up after a cold winter stroll outside.

    This was inspired by my chicken noodle soup recipe on this site, and pairs well with this two minute microwave bread recipe.

    Ingredients

    The ingredient list is very simple for this recipe! It contains minimal ingredients for a quick and easy meal you can put together in minutes!

    Ingredients needed to make potato and corn chowder soup recipe
    • Chicken stock
    • Creamed corn
    • Bacon
    • Chives
    • Potatoes
    • Chicken (optional)

    Instructions

    1. Heat your pot to medium heat. Cook the chopped bacon for several minutes, then drain on paper towels. Reserve 3 tablespoons of bacon grease.
    2. In your pan, place the cubed potatoes and give them a stir. Stir in the bacon grease, chicken stock, creamed corn and chives.
    3. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
    4. Season with salt and pepper to taste. Adjust to your desired level of creaminess by adding more broth or mashing some of the potatoes for a thicker consistency.
    5. Serve piping hot with crusty bread for dipping.

    Mix all ingredients in a soup pan, bring to a boil, then serve.

    Substitutions

    This recipe is easy to make to your dietary preferences and needs.

    • Gluten free - This recipe is naturally gluten free so you won't need to make any substitutions.
    • Vegan - Use vegan creamed corn. You can also use vegetable broth and omit the bacon.

    There are some fun additions you can add to this soup including:

    • chicken - dice up some chicken and throw it into your soup.

    • 2 pounds yellow potatoes cut into cubes
    • 6 ounces bacon cut into bite sized pieces
    • 4 cups chicken broth
    • 2 14.5 oz cans creamed corn
    • 1 bunch green onions chopped into small pieces
    • Salt and pepper optional

    Instructions
     

    • In a large pot set to medium heat, cook the bacon until it reaches a crispy texture, approximately 8 minutes.
    • Using a slotted spoon, gently extract the bacon then lay them on a paper towel-lined plate. Reserve 3 tablespoons of bacon grease.
    • Add your bacon grease, chicken stock, creamed corn, potato cubes, and green onions in your pot.
    • Cook on medium low heat for 15 minutes until the potatoes are tender.
