Instructions
- Heat your pot to medium heat. Cook the chopped bacon for several minutes, then drain on paper towels. Reserve 3 tablespoons of bacon grease.
- In your pan, place the cubed potatoes and give them a stir. Stir in the bacon grease, chicken stock, creamed corn and chives.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
- Season with salt and pepper to taste. Adjust to your desired level of creaminess by adding more broth or mashing some of the potatoes for a thicker consistency.
- Serve piping hot with crusty bread for dipping.
