  • Pinch of ground cloves
  • 3/4 cup nonfat plain greek yogurt (you can also do 1/4 cup butter, 1/2 cup greek yogurt for a little more traditional butter flavored cookie)
  • 1/2 cup brown sugar (can substitute coconut sugar)
  • 3/4 cup granulated sugar (can also substitute coconut sugar)
  • 1 egg white
  • 1 1/2 teaspoons vanilla extract
  • 3/4 cup pumpkin puree (not pumpkin pie filling)
  • 1 1/2 cups chocolate chips (can substitute non dairy chips like Enjoy Life)

  1. Preheat oven to 350 degrees. Lightly grease a cookie sheet.
  2. In a small bowl, mix together the flour, baking soda, baking powder and spices. Set aside.
  3. In the mixing bowl of a mixer, mix the greek yogurt (or butter/yogurt combination) and the sugars until smooth. Slowly pour in the egg white, vanilla extract and pumpkin puree, continuing to mix until smooth. Add in the flour mixture, continuing to mix until smooth. Turn off mixer, fold in chocolate chips.
  4. Drop dough by rounded tablespoons onto a lightly greased cookie sheet, leaving 1-2 inches of space between cookies. Bake at 350 degrees for 10-12 minutes. Remove from oven and allow cookies to cool for several minutes on the cookie sheet before transferring to a wire cooling rack to finish cooling.
