Veggie Grilled Cheese Sandwich

I couldn’t let the month pass by without sharing a grilled cheese sandwich recipe. It is National Grilled Cheese Month. I’ve made a fruit filled grilled cheese sandwich and if you eat your fruits, you’ve also got to eat your veggies too. So here is a delicious recipe for a veggie grilled cheese sandwich.

This grilled cheese sandwich recipe is a little different than most. It’s got loads of your favorite veggies and pepperjack cheese to spice the sandwich up a little bit. It tastes incredible! I love the spicy addition. It was perfect.

Veggie Grilled Cheese Sandwich

Yield: 1 sandwich

Serving Size: 1 sandwich

A delicious arrangement of veggies with a hint of spicy pepperjack cheese.


  • 1/4 cup shredded or diced veggies--carrots, zucchini, squash, bell pepper
  • 1/4 cup shredded pepperjack cheese
  • 2 slices whole wheat bread
  • Butter, for spreading


  1. In a small bowl, mix together the cheese and diced or shredded veggies. Butter one side of each piece of bread.
  2. Heat a griddle over medium heat. Place the slice of bread, butter side down on the griddle. Scoop the veggies from the bowl and place on top of the piece of bread, spreading evenly. Place the other side of bread, butter side up on top. Heat until the cheese begins to melt and bread is browned.Flip sandwich and continue cooking until other side of bread is browned and cheese finishes melting. Remove from heat.
