A grilled cheese sandwich is like an old pair of jeans. There is something comforting about the familiar. As I walked into school this second year, I was excited to see familiar faces, my office and felt a little more comfortable in my role.

But then my administration started to fire out changes we were going to make this year and I realized I am still very, very new. And suddenly I just craved the familiar comforts of my comfortable office.

But as I know, change comes. Sometimes it comes in a drastic melodramatic fashion and other times it creeps in slowly, hoping we don’t notice.

By the time I picked up kids, took one to the dentist, the dog to the vet and finished chores around the house while running all the new changes happening this year through my brain a few dozen times so they would stick there I was ready for dinner. 

So dinner was a grilled cheese sandwich.

My love of grilled cheese sandwiches runs deep. There is truly nothing better than the classic grilled cheese sandwich but I’m not sure why my favorite variations often include fruit like this Fruit Filled Grilled Cheese from some of the earlier days of the website.

I didn’t leave veggies out though and made a Veggie Grilled Cheese  and then went spicy with a Chipotle Chicken Grilled Cheese. But of course, NOTHING is better than the classic grilled cheese with some tomato soup.

But today, I’m mixing little sweet, a little salty and a hint of spice with this turkey apple jack grilled cheese sandwich. 


Turkey Apple Jack Grilled Cheese Sandwich

  • Deli turkey slices
  • Bread
  • Pepperjack cheese
  • Thin apple slices
  • Butter, softened
  1. Preheat grill to medium heat. Spread a knifeful of the softened butter over one side of each of the slices of bread to coat evenly.
  2. Layer desired amount of cheese, turkey slices and apple on the inside (non buttered) `sides of the bread. Place the buttered side of the sandwich down on the grill and cook for 3-5 minutes or until browned, then flip and cook the other side an additional 3-5 minutes until bread is browned and cheese is melted.
