2020 is roaring in and I can't believe we are half way through the month. Hopefully you have not abandoned any hope of finishing your New Year's Resolutions. I actually aimed small this year. I didn't even want to set any resolutions. Every goal I set that I've done well with was never started in January. But I am always in awe of those who set a goal and see it through. I'm just not motivated in January to do anything other than wrap myself up in fuzzy socks, pj's and sweaters until it gets warmer.
Today our recipe for garlic rosemary sheet pan dinner and baked potatoes is for those of you who have abandoned your resolutions and need some easy recipes to help get you back on track and for those of you who are just crazy busy.
This meal takes about an hour start to finish and includes some wonderful flavors that everyone in your family will love! There is very minimal work needed to make this meal.

Rosemary Garlic Sheet Pan Dinner with Baked Potatoes
Ingredients:
6 boneless, skinless chicken breasts
½ cup olive oil
4 tbsp fresh rosemary (or 3 tbsp dried)
6 cloves garlic, minced
2 tsp salt
1 tsp pepper
6 russet potatoes
2 cups broccoli, green beans or brussel sprouts
Preheat oven to 400 degrees. lightly grease a cookie sheet or line with parchment paper. Pierce potatoes on both sides once with a fork, than place on the cookie sheet. Bake at 400 degrees for 20 minutes. Open the oven and place the cookie sheet on a hot pad.
While the potatoes are cooking, in a bowl mix together the oil, rosemary, garlic, salt and pepper.
After the potatoes have been removed from the oven, working quickly, dip the chicken breasts in the oil mixture, than place on the cookie sheet.
Place the cookie sheet in the oven and bake for 20 minutes. open oven, flip chicken and potatoes and add vegetables onto the cookie sheet. Cook an additional 20 minutes or until chicken is no longer pink and potatoes are cooked thoroughly.
Remove from oven and serve warm.
