I love that the kids are out of school and get to spend their days relaxing and enjoying all that summer offers them. These summers won’t last long for them until they will be busy with summer jobs and responsibilities.

Poppin Fresh Barbecups

  • 1 lb ground beef
  • 1/2 cup BBQ sauce (we used Stubbs)
  • 1 tbsp dried minced onion
  • 2 tbsp packed brown sugar
  • 1/2 cup shredded cheddar cheese
  • 1 can biscuits (we used Immaculate Baking)

  1. In a skillet, cook ground beef until meat is browned. Drain meat and then place meat back into the skillet.
  2. To the skillet add the BBQ sauce , onion, and brown sugar. Stir until combined.
  3. Lightly grease 8-10 muffin tins. Roll each biscuit with a rolling pin to flatten, then place each one in a muffin cup so the dough comes up the sides. Fill with beef mixture.
  4. Top each muffin cup with cheese. Bake for 12 minutes at 400 degrees. Remove from oven and allow to cool for several minutes before serving.
